Challenge
Help an acai bowl retail chain enhance flavor and texture in their frozen acai smoothie base.
Process
After a conversation with the R&D lead for the project, our Account Manager uncovered that they did not want to use cane sugar in their formula. Because acai fruit is naturally sweet, they were looking for a more functional ingredient to enhance the flavors in their frozen acai fruit smoothie base without making it overly sweet. Additionally, they were looking for an ingredient to help make the texture smoother.
We recommended that they sample one of our specialty ingredients called Trehalose. Trehalose is a naturally occurring, multi-functional disaccharide (a substance that is composed of two molecules of simple sugars). TREHA™’s low sweetness brings out the natural flavor of ingredients and adjusts the taste by enhancing desirable flavors and suppressing off flavors of ingredients. Along with flavor improvement, Trehalose also helps enhance texture. In frozen products, like gelato and frozen smoothie bases, Trehalose inhibits the growth of ice crystals, which results in silky-smooth texture.
Solution
After test trials, they found improved flavor and texture when incorporating Trehalose at a 2% usage rate into their acai smoothie.
