Challenge
Help a manufacturer enhance the bite and texture in gummy candies for two of their largest confectionery customers.
Process
During a check-in conversation with this manufacturer, one of our Account Managers discovered that they were unhappy with the texture and bite for a line of gummies they were manufacturing. Our Account Manager learned that they were already using a buffered pectin in their formula, but were open to trying another option in order to achieve better results.
We recommended that they sample GRINDSTED® Pectin CF 130 B-S1. This product is an extra slow-set, high-ester pectin made from citrus peels and standardized with sodium potassium tartrate, sodium tripolyphosphate, and maltodextrin. We’ve had proven success recommending this ingredient to similar customers who were hoping to achieve the same functionalities in the same end-application.
Solution
After test trials, the manufacturer found improved bite and texture when incorporating the pectin at a 2% usage rate.
