Challenge
Help a dressing brand incorporate an organic antimicrobial into their certified organic dressing SKUs.
Process
Our Account Manager met with the R&D team who was looking for a certified organic antimicrobial for their kitted salad dressings. We recommended they sample Microgard 730, our certified organic and kosher parve antimicrobial. Microgard 730 provides full spectrum protection from yeast, mold, gram negative and gram positive bacteria. Benefits of this ingredient include:
- Neutral or positive flavor impact on end product
- Label-friendly solution to chemical preservatives – composition is cultured dextrose and maltodextrin
- Cost effective dry system for easy handling with other dry ingredients – should be added as quickly as possible to the aqueous portion of the formula
- Effective post-lethality hurdle against L. monocytogenes
Solution
Ultimately, the customer was pleased with the performance of Microgard 730 in their salad dressings, as we were able to provide the customer safe food solutions for not only portion packed but also larger bag in box sauces for corporate social responsibility usage.
