Challenge
Help a dog food manufacturer find a clean label emulsifier for their kibble topper product.
Process
After connecting with the R&D department of a large dog food manufacturer, our Account Manager uncovered a need for an ingredient that could help with emulsification and water-holding, specifically in their kibble topper SKU. The company was looking for a functional ingredient that was also label-friendly.
We recommended they sample Citri-Fi™ Citrus Fiber. Citrus fiber is a clean label, upcycled ingredient produced from byproduct of the citrus juicing process. This process, which is free from chemical modifications, opens up the fiber to provide high water holding capacity and emulsification properties.
Additionally, Citri-Fi™ cleans up food labeling since its label declaration options include citrus fiber, dried citrus pulp or citrus flour.
We sent a sample of Citri-Fi™ 100FG [< 100 (149 µm)] and recommended usage rates around 0.20-1%. We also suggested a few different incorporation methods to trial: 1. Pre-mix Citri-Fi™ with dry ingredients that weigh approximately 10 times the weight of the Citri-Fi™, 2. Disperse Citri-Fi™ first into oil, and 3. Prehydrate directly in water in 3% solutions or less, but Citri-Fi™ must be added slowly with strong agitation to avoid clumping.
Solution
After test trials, the customer was thrilled with the emulsification and
water-holding functionality of Citri-Fi™ 100FG in their kibble topper product. They found success incorporating the Citri-Fi™ with dry ingredients at a 0.5% usage rate.
