Challenge
Help an established hot sauce brand find a clean label solution to help improve emulsification in their new salsa product launching in Whole Foods.
Process
Our team recommended sampling Citri-Fi 100FG, which is <100 mesh size and can be labeled as Citrus Fiber, Dried Citrus Pulp, or Citrus Flour. This ingredient helps with natural water-holding and emulsification and can replace or reduce modified starches, gums, emulsifiers, chemical stabilizers, allergens, phosphates, and/or fats/oils.
We advised on the procedure, which can be different depending on the application. For a salsa, it’s best to add the Citri-Fi into the liquid portion of the formula and blend with high shear. The customer tested usage rates in the 0.5%-0.75% range.
Solution
The customer found that when adding Citri-Fi 100FG to their salsa at a 0.5% usage rate, they saw improved body, emulsification, and mouthfeel, without high viscosity. The fiber’s excellent heat and acid stability worked effectively in this specific application while maintaining a clean label for the customer.
