Isomalt is produced by the isomerisation and catalytic hydrogenation of sucrose, with subsequent solidification and milling. With its low level of hygroscopicity, meaning that it doesn't absorb water in the same way that sugar does, it is the product of choice for confectionary products such as hard-boiled candies.

The appearance of Isomalt is a white crystalline powder with different granulation options:

Fine powder

- developed for bakery applications like frozen dough, cakes, and cookies. It can also be used for sugar free chewing gum coating, chocolate coating and frosting/icing.

Standard granular powder

- suitable for unwrapped sugar-free hard candy. It offers excellent candy shelf life and low stickiness. It is also suitable for other confectionary applications such as sugar-free chewing gum coating.
